They are typically represented by a single-letter code (4 different letters for DNA and 20 different letters for protein sequences). Typical sequence analysis tasks are sequence alignment, calculating phylogenetic trees for related sequences, predicting the 3D structure of molecules and predicting the function of genes and proteins based on the sequence.
